Abstract: The invention is directed to a process for producing a tea drink comprising the steps of: extracting tea leaves and adjusting the obtained tea extract to a pH of from 5.0 to 6.0; mixing nitrogen with The invention is directed to a process for producing a tea drink comprising the steps of: extracting tea leaves and adjusting the obtained tea extract to a pH of from 5.0 to 6.0; mixing nitrogen withthe tea extract and applying a negative pressure of 0.01 MPa or more; subsequent to the step of applying a negative pressure, stabilizing the tea extract by maintaining it at atmospheric pressure forthe tea extract and applying a negative pressure of 0.01 MPa or more; subsequent to the step of applying a negative pressure, stabilizing the tea extract by maintaining it at atmospheric pressure for30 seconds to 20 minutes; and during or after the stabilization step, adjusting the tea extract to a pH of from 5.5 to 6.5. The loss of aroma during the production process is suppressed, and a tea dri30 seconds to 20 minutes; and during or after the stabilization step, adjusting the tea extract to a pH of from 5.5 to 6.5.
