Purpose – The purpose of this paper is to determine the socio‐economic factors affecting meat sales outlets, as preferred by the consumers of the city of Tokat, Turkey. This paper underlines the social and economic factors leading to healthy meat outlet preferences and focuses the attention of producers, policy makers, sellers and consumers on the issue, which will lead to the creation of a healthier and more aware society.Design/methodology/approach – Within the research, the sample size, preferred as 263, will deviate at a maximum of 6 percent from the main population at 95 percent importance level. The inquiries are proportionally dispersed between the quarters, considering the population, in accordance with the records of 2006. Surveys were carried out by way of direct interviews by the researchers. An analysis of the factors affecting the food places where consumers purchase red meat

Bu calisma Bingol merkezde yumurta tuketimi uzerine etkisi oldugu dusunulen tuketici ozellikleri ile tuketicilerin satin alimina ve tuketimlerine etkisi olan zevk, tercih ve aliskanliklarini belirlemek amaciyla yapilmistir. Bingol il merkezinde yasayan hane halkinin gelir seviyesi, gida harcamalari, karar alma ve satin alma surecleri ele alinmistir. Bu amacla 384 aile ile anket yapilmistir. Yapilan anket sayisi ana kitle oranlarina dayali kumelendirilmemis tek asamali basit tesadufi olasilik orneklemesi ile belirlenmistir. Arastirma sonuclarina gore, incelenen ailelerde aile basina aylik yumurta tuketimi ortalama olarak 61.6 adet, kisi basina yillik yumurta tuketimi ise 146.3 adet olarak bulunmustur. Tuketicilerin yumurta alim sikligi olarak %44.1’nin iki haftada bir yumurta satin aldigi gozlenirken, ayda bir alanlarin orani ise %27.8 olarak bulunmustur. Ailelerin ortalama olarak %36.8’i beyaz yumurtayi, %20.0’i kahverengi yumurtayi tercih ettikleri gorulmustur. Ailelerin cok onemli bir kismi (%88.0) yumurtayi oncelikle sabah kahvaltilarinda tuketmek amaciyla aldiklarini soylemislerdir. Yumurta satin alirken yumurtanin buyuklugune dikkat edenlerin orani %69.3 olarak saptanmistir. Tuketicilerin %77.3’u yumurtayi marketten satin aldiklarini belirtmislerdir. Sonuc olarak; yumurta tuketiminin arttirilmasi icin tuketici taleplerinin dikkate alinarak uretim modellerinin revize edilmesinin onemli oldugu soylenebilir.

Bingöl İl Merkezinde Yaşayan Hane Halklarının Yumurta Tüketim Durumu Üzerine Bir Araştırma

The effects of bird flue on consumers’ broiler consumption were analyzed in this study. The socio-economic situation of the consumers, their consumption before and after bird flue, their preferences for broiler consumption, their preferences of buying healthy broiler, and the effective factors in purchasing broiler were indicated. A total of 210 survey forms were filled with households. The analysis of data were conduced according to 3 income levels. While the average broiler consumption was 4.27 kg/month before bird flue, this amount decreased to 3.19 kg/month. While the price, producer/brand, package, weight, apperance, being from village, and color of product was important; the fershness and confidence of healthiness were determined to be important. Of the households more than 50 percent thought that the disease will not affect the humanbeing. That is why, even during that period they did not change their consumption. On the other hand, 42.86 percent of the respondents decreased their amount of consumption because of the disease.

Kuş Gribinin Tüketicilerin Tavuk Eti Tüketim Alışkanlıklarına Etkisi (Tokat İli Örneği)

Bu calismanin amaci Gaziantep ili kent merkezindeki tuketicilerin yumurta tuketim davranislarini ve tuketim tercihinde etkili olan faktorleri belirlemektir. Arastirmanin ana materyalini Gaziantep ili kent merkezinde 271 tuketici ile yapilan anketlerden elde edilen veriler olusturmaktadir. Verilerin analizinde tanimlayici istatistikler, F-testi ve ki-kare testlerinden yararlanilmistir. Arastirma bulgularina gore, tuketicilerin %96.31’inin yumurta tukettigi, hanede haftada ortalama 16.79 adet yumurta tuketildigi ve yumurta harcamasinin aylik gida harcamasi icerisinde payinin %3.81 oldugu tespit edilmistir. Tuketicilerin onemli bir kismi (%89.27) market veya supermarketlerden yumurta satin alirken, %42,50’si sadece markali yumurta tercih ettiklerini belirtmislerdir. Tuketiciler yumurtada dikkat edilen en onemli ozelliklerin sirasiyla saglikli olmasi (4.87), imalat tarihi (4.85), tazeligi (4.84) ve tadi (4.81) oldugunu bildirmislerdir. Yumurta tuketimi Turkiye ortalamasina yakin, ancak dunya ortalamasinin oldukca altindadir ve artirilmasi gerekmektedir. Tuketici bilinclendirme calismalari yapilmasi, hayvan ve cevre refahini artiracak onlemler alinmasi ve yumurtanin pazarlanabilirliginin artirilmasi onerilmektedir.

Gaziantep İlindeki Tüketicilerin Yumurta Tüketim Alışkanlıklarının Belirlenmesi

This study is consisted of data obtained from the survey conducted with 400 consumers in Usak province urban area. As a result of the analysis, the average amount of annual per capita chicken meat consumed was calculated as 13.64 kg. The average amount of consumption increases due to the increase in income level. 39.2% of the consumers (consume chicken meat once a week. However, nearly half of consumers (41.7%) consume chicken meat, this is one third in total meat consumption. This ratio is changing according to income groups. Consumers supply chicken meat from vendors, grocery stores and groceries. The main reason for consumption of chicken meat for consumers; low price, easy to find on the market and healthy. Nearly half (42.5%) of the consumers prefer whole chick. The percentage of those consumed in the chicken meat consumed by the consumers is very low. Factors that are effective on consumers preferences for chicken meat; the freshness of the product, the price, the type of packaging, the quality, the producer company, the advertisement of the product, the taste of the consumer and the date of manufacture of the product. According to consumer preference (but, baguette, chest, wings etc.) processed products can be prepared according to the grill or other purposes and presented to the consumer. As consumers are prepared to extra payment for organic (ecological) food products, the farmers can be guided by incentives to organic poultry breeding systems.

Investigation of Chicken Meat Consumption Habits in Terms of Improvement of Broiler Breeding: A Case Study of Uşak Province

This study was carried out to investigate the level of egg consumption and consumption pattern of consumers in urban areas of Sanliurfa in January and February, 2000. A survey was conducted to create a database from people representing different living standarts. Based on results obtained from this study, average monthly egg consumption per family was found to be 60.4 and annual egg consumption per person was 126. It was determined that the rate of egg consumption increased as the income level of the family increased. The study revealed that 51.4 % of the consumers purchased eggs once a week while 10.3 % of the consumers preferred purchasing eggs once a month.. The color preference of the consumers was determined to be 63.7 % white eggs and 25.1 % was brown eggs. An important amount of the consumers (63.5%) indicated that they consume eggs primarily for breakfast. The consumers who pay attention to the size of the eggs while purchasing was found to be 96.4 %, 45.0 % of the consumers preferred buying eggs from market.

This study was designed to investigate the level of chicken meat consumption and consumption pattern of consumers in Sanliurfa urban areas. The database of the present study was made up by surveying the people representing different groups of standard of living. The survey was carried out between January and February, -2000. According to the results obtained among the f amilies investigated, while the consumption of chicken meat per person was 133 kg, this was 75.6 kg per family. The consumption of chicken meat varied -depending upon the people’s standard of living and the increase in the standard of living brought about more chicken meat consumption. It was also noticed that while 43.4 percent of the consumers bought chicken meat once a week, 34.3 percent of the consumers had once in every two weeks, 13.5 percent of them purchased once a month and 8.8 percent of consumers bought more than once a-week. In average, 60.2 percent of the consumers preferred to buy chicken as a whole. The ratio of the consumers preferred to purchase chicken as parts was 36.7 percent. The most preferred part of chicken was legs with preference of 50 percent of consumers This was followed by breast with 36.7 percent preference. 46.0 percent of the consumers who favour to buy chicken as a whole, want to have a medium size carcass. It was also noticed that there was a remarkable variations between the places where consumers bought chicken and many of the consumers (73.32 percent) preferred io buy chicken from the markets.
