Cellulase-Assisted Extraction of Polysaccharides from White Hyacinth Bean: Characterization of Antioxidant Activity and Promotion for Probiotics Proliferation.
TL;DR: Investigations of PWBs provide a novel bioresource for the exploitation of antioxidant and probiotic bacterial proliferation and contributed to the proliferation of three probiotic bacteria.

Effect of Xanthan–Chitosan Microencapsulation on the Survival of Lactobacillus acidophilus in Simulated Gastrointestinal Fluid and Dairy Beverage
TL;DR: Encapsulated Lactobacillus acidophilus exhibited a significantly higher resistance to SGF and SIF than non-encapsulated samples, and was incorporated into dairy beverages for 21 days both at room temperature and in refrigerated storage.

Effects of Kefir Grains on Fermentation and Bioactivity of Goat Milk
TL;DR: In this paper, the effects of kefir grains from different regions in China on fermentation and bioactivity were studied by using pH value, acidity degree, protein hydrolysis degree, antioxidant activity, angiotensin converting enzyme (ACE, EC 3.4.15.1) inhibition rate and sensory evaluation as indexes to select the most suitable kefrir grains as starter for goat milk.
Microencapsulation of Bifidobacterium bifidum BB01 by xanthan-chitosan: preparation and its stability in pure milk.
TL;DR: The effective encapsulation system (XC and XCX) resulted in improvement in survival of B. bifidum BB01 compared to non-encapsulated cells during 3 weeks storage at 4 and 25 °C in pure milk.

Optimization of Emulsifying Effectiveness of Phytosterol in Milk Using Two-Level Fractional Factorial Design
TL;DR: In this paper, the effects of seven emulsifiers including Span 80, Tripolyglycerol monostearate, Sodium stearoyl lactylate, sucrose ester, soy lecithin and monoglyceride on phytosterol in milk were investigated using single factor test and fractional factorial design.
