TL;DR: It was indicated that HPM induced 2 kinds of aggregation changes on WPC: deaggregation and reaggregation, which resulted in the changes of functional properties of WPC modified by HPM, which showed significant modifications in the solubility and foaming properties with increasing pressure.

Purification and conformational changes of bovine PEGylated β-lactoglobulin related to antigenicity
TL;DR: As conjugated number of mPEG-SC with β-LG increased, the quenching of fluorescence and the content of β-strands were increased gradually, which may contribute to the decrease of antigenicity from two aspects.
