Achieving high strength vinegar fermentation via regulating cellular growth status and aeration strategy
TL;DR: In this paper, a semi-continuous vinegar fermentation was optimized with an optimal discharge/charge ratio of 34% of working volume (v/v), which resulted in a proper growth status of Acetobacter and beneficial to acetification.

Mutation of Acetobacter pasteurianus by UV irradiation under acidic stress for high-acidity vinegar fermentation
TL;DR: To obtain a mutant with higher vinegar production, a wild-type industrial strain Acetobacter pasteurianus CICIM B7003 was pretreated in 50 g L−1 acetic acid for 1 h and cultured for 12 h without adding any acetic acids; then, the enriched cells were mutated by UV under acidic stress.

High strength vinegar fermentation by Acetobacter pasteurianus via enhancing alcohol respiratory chain
TL;DR: In this article, a series of trials were designed to raise the activity of AAB alcohol respiratory chain, located on intracellular membrane, is directly responsible for vinegar fermentation, and the average acetification rate has been raised to 2.29 ± 0.02 g/L/h, which was 28.7% higher than the original level.
