TL;DR: In this article, an indirect immersion freezing solution for prepared beef steak is described, which belongs to the technical field of frozen processing of prepared meat products and has the advantages that the freezing point is low, the viscosity is small, the liquid loss rate of thawed prepared steak can be reduced, and nutrient loss can be prevented.
