Purpose
Online food delivery (OFD) has witnessed momentous consumer adoption in the past few years, and COVID-19, if anything, is only accelerating its growth. This paper captures numerous intricate issues arising from the complex relationship among the stakeholders because of the enhanced scale of the OFD business. The purpose of this paper is to highlight publication trends in OFD and identify potential future research themes.


Design/methodology/approach
The authors conducted a tri-method study – systematic literature review, bibliometric and thematic content analysis – of 43 articles on OFD published in 24 journals from 2015 to 2021 (March). The authors used VOSviewer to perform citation analysis.


Findings
Systematic literature review of the existing OFD research resulted in six potential research themes. Further, thematic content analysis synthesized and categorized the literature into four knowledge clusters, namely, (i) digital mediation in OFD, (ii) dynamic OFD operations, (iii) OFD adoption by consumers and (iv) risk and trust issues in OFD. The authors also present the emerging trends in terms of the most influential articles, authors and journals.


Practical implications
This paper captures the different facets of interactions among various OFD stakeholders and highlights the intricate issues and challenges that require immediate attention from researchers and practitioners.


Originality/value
This is one of the few studies to synthesize OFD literature that sheds light on unexplored aspects of complex relationships among OFD stakeholders through four clusters and six research themes through a conceptual framework.


Online food delivery research: a systematic literature review

This paper focusses on on-demand food delivery (ODFD), i.e. the delivery of freshly prepared meals to customers' homes, enabled by the use of online platforms. In ODFD, a key process is represented by last-mile deliveries (LMDs): they directly affect customers (the delivery price influences their purchase intention), riders (the compensation drives their willingness to perform deliveries) and platforms (deliveries are very expensive). In this context, this work aims to investigate the economic performances of ODFD LMDs.,This study adopts a multi-method threefold process. First, it develops a model that – after the generation of customers' demand and the assignment of deliveries to available riders – identifies incomes and costs faced by an ODFD operator. Second, the model is applied to a base case in Milan (Italy). Third, sensitivity analyses are performed (on daily demand and riders' salary).,The analyses allow – besides the identification of significant values associated to ODFD profitability – to draw general insights about delivery price (e.g. free delivery is not economically sustainable), daily demand (e.g. greater demand values do not only improve positive results but also worsen negative ones) and fixed/variable wage mix (e.g. increasing the variable wage enhances the profitability for platforms).,On the academic side, this word enhances extant literature about ODFD, proposing a model – with multidisciplinary implications – to strategically investigate profitability conditions of LMDs. On the managerial side, it provides support for (logistics/marketing) ODFD practitioners since it allows to evaluate the potential impact of significant decisions on profitability.

On-demand food delivery: investigating the economic performances

The immediate response to disasters, while well intended, sometimes causes avoidable humanitarian challenges later on. Drinking water may be essential, but it is not necessary to provide it in small plastic bottles. Injections may save lives, but inappropriately discarded syringes are hazardous. Can humanitarian relief be made more sustainable? This paper summarizes a 1-day workshop on this topic, held at INSEAD in 2019 in connection with Luk Van Wassenhove's transition to emeritus professor. This workshop involved over 100 academics and practitioners. Five areas were discussed in detail: material convergence, coordination between humanitarian organizations (HOs), logistics, partnerships with industry, and health. The discussions demonstrate the possibility of better integrating sustainability with humanitarian operations despite the inherent tension between the immediate need to save lives and the longer term perspective associated with sustainability. This requires that various stakeholders, including HOs, donors, and watchdog organizations, think differently about the balance between short-term and long-term interventions, the metrics and incentives they apply, and the role of local versus global organizations. Leading practitioners and scholars in humanitarian operations are well aware of these challenges and opportunities in each domain separately; this paper aims to introduce these issues to a broader audience in a single more integrated overview, based on the themes that were discussed at the workshop. 

Sustainable humanitarian operations: An integrated perspective

Universal health coverage (UHC) is an integral part of the United Nations’ sustainable development goals. The private sector plays a prominent role in achieving UHC, being the primary source of essential medicines for many people. However, many private healthcare facilities in low- and middle-income countries (LMICs) have insufficient stocks of essential medicines. At the same time, we find that these same facilities carry excessive quantities of certain drugs, leading to losses due to obsolescence. This suggests poor inventory control. To propose potential remedies, it is key to fully understand the underlying causes. In semi- structured interviews with facility managers from private healthcare facilities in Nairobi we asked them about their 1) inventory control systems, 2) inventory control skills, 3) time/human resource constraints, 4) budget constraints, 5) motivations for inventory control, and 6) suppliers. Our results show that the problems are strongly driven by resource limitations (budget and time/human resources), managerial issues (relating to skills and systems), and market mechanisms that limit overage and underage costs. Unavailability at the supplier level, and motivations for inventory control, are only minor issues. We argue that these key causes are strongly interlinked and stem from deeper issues in the market and regulatory environment. Our results challenge several prevalent beliefs about medicine supply chains in LMICs and lead to hypotheses that require further testing. We also discuss how such testing could improve our understanding of inventory management in private healthcare facilities and aid progress in achieving UHC.

Inventory Management Practices in Private Healthcare Facilities in Nairobi County

Food waste is a severe economic and social problem. Restaurants contribute significantly to food waste because they face the classic trade-off between speed of service and leftover inventory, which is particularly crucial in the context of quick service restaurants (QSRs). To offer a high speed of service, QSRs pre-cook most of their food, but they can hold it only for a short time. To effectively manage this trade-off, QSRs have become increasingly reliant on demand forecasts. However, online food-delivery platforms that connect restaurants, riders/drivers, and consumers are growing in popularity, and it is unclear how the growth of food-delivery platforms impacts the ability of restaurants to accurately forecast their demand. We empirically investigate the impact of food-delivery platforms on the demand forecast error in QSRs and analyze the underlying mechanism. We find that as customers become increasingly dependent on food-delivery platforms, QSR demand becomes harder to forecast. We also find that the majority of the increase in overall forecast error is due to an increase in the error associated with the demand pattern and a smaller portion is due to error in forecasting demand amplitude. Based on our results, we offer suggestions for QSRs on how to manage their relationship with food-delivery platforms to decrease their forecast error and increase operational effciency.
