The physicochemical quality characteristics of the domestic and imported commercial dried persimmons were investigated. The moisture content of dried persimmon was approximately 22.78~61.64%, while the moisture contents of the Chinese dried persimmon were 22.78 and 28.20%, respectively, and were lower than the domestic dried persimmon. The pH of the Chinese dried persimmon was 5.09~5.99, while the pH of the Haman dried persimmon has the highest value (pH 5.99). The Brix was approximately 25.07~42.93 °Brix and weight of dried persimmons were 29.77~77.95 g, while the weight of Yeongdong dried persimmon has the lowest (29.77 g), and the weight of the Sancheong dried persimmon has the highest value. The L values were 18.27~66.20. The a values were -1.26∼10.70 and a value of the Sancheong dried persimmon was 10.70, which was the highest. The b values were 2.81∼25.25, wherein the b value of the Cheongdo semi-dried persimmon and Sancheong dried persimmon were25.25 and 21.98, respectively, and were higher than others. The appearance score of the sensory characteristics were the highest in Cheongdo semi-dried persimmon, while the appearance score of Wanju black persimmon was 1.39, which was the lowest. The overall acceptability of the Chinese dred persimmons (No.2) was the highest, while that of the Yeongdong, Hadong and Sangju dried persimmons have higher values than the other dried persimmons. The sulfur dioxide content of the 9 kinds of commercial dried persimmon was lower than 10 mg/kg, but not detected.

Quality characteristics of domestic dried persimmon and imported dried persimmon

This study was planned to monitor the change in the content of sulfur dioxide during the drying process of fresh vegetables. The analysis of sulfur dioxide was conducted by the Optimized Monier-Williams Method based on the Korea Food Code. The samples were kinds of vegetables which consisted of naturally-originated sulfur compounds (green onion, onion, cabbage, garlic, radish leaves, radish). Fresh vegetables (n = 182) and dried vegeta- bles (n = 41) purchased from different local areas were investigated for the content of sulfur dioxide. The fresh vege- tables were dried at 50~60 o C using hot-air dryer. The moisture contents of dried samples were adjusted to keep 10 percents. The contents of sulfur dioxide in self-dried vegetables were 104.6 mg/kg in green onion, 75.4 mg/kg in onion, 129.1 mg/kg in cabbage, 197.6 mg/kg in garlic, 23.0 mg/kg in radish leaves and 52.5 mg/kg in radish, respec- tively. The increase of sulfur dioxide content according to the moisture content reduction was different from the expected. It means that the contents of sulfur dioxide can be altered by other factors except moisture contents. This results can be utilized as materials for the safe management of sulfites of dried vegetables.

Study of Sulfur Dioxide Contents in Various Fresh Vegetables During the Drying Process

Electrospinning of porous fiber-electrode materials for solid oxide fuel cells: Fundamentals and challenges

To compare the content of natural existence with artificial addition experimental subject of 152 cases(25 kinds) were classified by two category of 42 fresh samples(14 kinds) and 110 processed samples(23 kinds). The content of sulfur dioxide were determined by Monnier-Williams's modified method. In mean content of 42 non-processed samples studied the range of contents was between 0.00 and 9.46 mg/kg. Radish contained the highest amount of sulfur dioxide(8.97 mg/kg), followed by onion(8.04 mg/kg). In mean content of 110 processed samples studied, the range of content was between 0.00 and 1,828.59 mg/kg. Gourd contained the highest amount of sulfur dioxide(1,064.61 mg/kg), followed by apricot(869.62 mg/kg), dried persimmon(64.11 mg/kg), dried radish(29.00 mg/kg), dried pumpkin(17.63 mg/kg), and those were lowe. than criteria. To supply safe food for the citizens, the quantitative level is required to be reinforced to supply safe foot continuously.

[P2-05] A Study on Contents of Sulfites in Fruits and Vegetables

The feasibility and opportunity of nanostructured and defect-engineered electrodes for exceptional performance and stability of solid oxide fuel cells operating at intermediate temperatures (500–700°C) are reported in this study. The electrode is designed with infiltrated La0.4Sr0.6MnO3-δ (LSM) nanoparticles as oxygen reduction reaction catalysts on an yttria-stabilized zirconia (YSZ) nanofiber scaffold with a controlled sintering temperature of 800–1200°C for optimized nanostructures and defect concentration of the nanofiber scaffold. Nanostructured electrode with the lowest sintering temperature of 800°C exhibits ~8.1 times higher specific surface area and ~1.6 times higher oxygen vacancy concentration than that with a sintering temperature of 1200°C. The cell with a sintering temperature of 800°C demonstrates an outstanding performance of ~2.11 and 1.09 W/cm2 at 700 and 600°C, respectively, with excellent stability for 300 h under the current density of 1.5 A/cm2 at 750°C.
