TL;DR: In this paper, a docosahexaenoic acid (DHA)-enriched salmon patty was compared with soybean oil-added patty and commercial patty, and the DHA-enriched patty had 5% less trichloroacetic acid (TCA)-soluble nitrogen, and it was firmer.
