Understanding drivers of food choice in low- and middle-income countries: A systematic mapping study

High meat consumption is a phenomenon in both developed countries such as Switzerland and emerging countries such as Vietnam. This high meat consumption is associated with environmental, social, and health consequences. Drawing upon social practice theory, this study explores the influence of social practices on the meat consumption of green consumers, as a growing number of consumers in both countries want to eat healthy and sustainably but still have different needs and face different barriers. Data were collected from online group discussions. For green consumers, meat consumption was found to convey certain meanings and depends, among other things, on the information available. The consumption decision in Vietnam is strongly influenced by health and food safety, whereas negative environmental consequences are important in Switzerland. Social and cultural aspects also play a major part in the decision to eat or abstain from meat in both countries. Meat is a non-negotiable part of any special occasion meal in Vietnam and is often eaten at social gatherings in Switzerland. We argue that meat consumption is linked to social status in both countries, but family influence is stronger in Vietnam than in Switzerland. Interventions, such as policy measures that are adapted to regional, cultural, and consumer group specificities and focus on social practices rather than individual behavior, are a promising means to promote meat reduction. 

Healthy or Environmentally Friendly? Meat Consumption Practices of Green Consumers in Vietnam and Switzerland

Abstract The plant-based product (PBP) market sector is rapidly growing, but there is a noted lack of qualitative data examining consumers’ perceptions of these products. This study aimed to examine consumers perceptions and usage of plant-based products and brands to further refine and extend our understanding of the different layers of contemporary plant-based consumption. Online consumer focus groups ( n = 6) were used to gather qualitative data from consumers ( n = 20) in Ireland and the United Kingdom. Qualitative analysis was conducted using NVivo v.26 where a content analysis procedure was used to reduce data into categories and sub-categories, after which data within categories was analysed to identify themes. Six overarching themes were identified: (1) Pro-social and moral motivations as most prominent in influencing PBP consumption; (2) Personal and sociocultural reasons as emerging motivators on PBP consumption; (3) Brand, ingredients, flavour and price as key attributes; (4) Natural, unprocessed PBPs as most appealing; (5) Replicating functional and nutritional properties of animal protein as more important than replicating sensory properties; and (6) Locally produced products and brands as preferred. A conceptual model of consumer insights required for market-oriented PBP development and marketing is produced. This model is consumer led, and confirms and extends/refines knowledge on motivations for consumption, evaluation of product attributes, and market gaps and improvements for a new generation of PBPs.

Consumer motivations and desired product attributes for 2.0 plant-based products: a conceptual model of consumer insight for market-oriented product development and marketing

Increasing vegetable consumption can result in health benefits. In this context, this study aimed to identify predictors of the intention to increase vegetable consumption. Online surveys were carried out in Switzerland and Vietnam between November and December of 2022. Multiple regression analyses were applied to a sample of 1259 consumers to examine the factors affecting the intention to increase vegetable consumption. The results indicate that, in both countries, the intention to increase vegetable intake was positively influenced by the perceived vulnerability of insufficient vegetable intake and the self-efficacy of eating more vegetables. Furthermore, higher levels of employment among participants strengthened the intention to increase vegetable consumption. Heterogeneity among the studied countries was also observed. While the Swiss participants' intention to eat more vegetables was affected by familial hindering, the intention of the Vietnamese participants towards more vegetable intake was positively related to their interest in animal welfare. The variables response cost of eating more vegetables and biological sex were significant in the Vietnamese sample. We conclude that, for both countries improving consumers’ self-efficacy can result in increased vegetable consumption. Campaigns aiming to generate knowledge and improve cooking skills were suggested. The findings contribute to the current literature on sustainable and healthy food consumption. 

Determinants of the intention to increase vegetable consumption in Vietnam and Switzerland

The beneficial advantages of plant-based diets towards human beings have been well addressed over the last few decades. More and more people are now enjoying plant-based diets for their physical health, psychological health, animal rights, environment protection, etc. However, there are still many stereotypes about the lifestyle. Hence, this study aims at identifying key factors affecting the plant-based food choices so that we can propose feasible implications to widely promote plant-based diets across communities for their better health, eudemonic well-being and life satisfaction as well as the sustainable survival of our beloved planet—“Mother Earth”. Based on statistical analysis results of data collected from 1477 participants in 10 out of 19 provinces/cities in Southern Vietnam, the plant-based food choice is found significantly affected by not only gender and marriage status but also by a so-called SHOULD Model, where: (1) S refers to Spirituality and Social relationships; (2) H refers to Health concerns; (3) O refers to Opulence of plant-based foods and Outlook on life; (4) U refers to Understanding of human body structures; (5) L refers to Love towards animals; and (6) D refers to Diet knowledge. Among the identified factors, “understanding of human body structures” and “outlook on life” are two new factors proposed in this study, fulfilling the existing literature about the determinants of plant-based food choice. From such findings, some managerial implications are proposed to not only promote plant-based lifestyle but also help to develop plant-based food business in practice.
