TL;DR: Assessment of the influence of an exopolysaccharide on the yield, texture, cooking properties, and quality of half-fat Cheddar cheese indicated that cheeses made with the exopoly Saccharide-producing starter had an increase in actual cheese yield, without negatively affecting the flavor profiles of the cheeses.
