Development and characterisation of a pectin-based edible film that contains mulberry leaf extract and its bio-active components

Ripeness classification is one of the most challenging tasks in the postharvest management of mulberry fruit. The risks of microbial contamination and human error in manual sorting are significant; it may result in quality degradation and wasting of processed products. Due to advanced developments in computer vision and machine learning, automated sorting became possible. This study presents the results of developing and testing a computer vision-based application using convolutional neural networks (CNNs) for the classification of mulberry fruit ripening stages. To reduce the training cost and improve the accuracy of classification, transfer learning was used to fine-tune the CNN models. The CNN models in the test include DenseNet, Inception-v3, ResNet-18, ResNet-50, and AlexNet. Transfer learning was used to fine-tune the models and improve the accuracy of classification. The AlexNet and ResNet-18 networks exhibited the best performance with 98.32% and 98.65% overall accuracy for classifying the ripeness of white and black mulberries, respectively. Moreover, the performance of the models did not change when the data sets of both genotypes were mixed. The ResNet-18 was able to classify both genotype and ripeness from 600 fruit images in 2.36 min with an overall accuracy of 98.03%, which was superior to other architectures. It indicates that the model could be used for precise classification of the ripening stages of mulberries and other horticultural products, as a part of an automated sorting system.

Detection of Mulberry Ripeness Stages Using Deep Learning Models

Leaf biomass from the mulberry plant (genus Morus and family Moraceae) is considered a potential resource for livestock feeding. Mulberry leaves (MLs) contain high protein (14.0-34.2%) and metabolizable energy (1130-2240 kcal/kg) with high dry matter (DM) digestibility (75-85%) and palatability. Flavonoid contents of MLs confer unique antioxidant properties and can potentially help alleviate oxidative stress in animals during stressful periods, such as neonatal, weaning, and periparturient periods. In addition, mulberry leaf flavonoids (MLFs) possess antimicrobial properties and can effectively decrease the population of ruminal methanogens and protozoa to reduce enteric methane (CH4) production. Owing to its rich flavonoid content, feeding MLs increases fiber digestion and utilization leading to enhanced milk production in ruminants. Dietary supplementation with MLFs alters ruminal fermentation kinetics by increasing total volatile fatty acids, propionate, and ammonia concentrations. Furthermore, they can substantially increase the population of specific cellulolytic bacteria in the rumen. Owing to their structural homology with steroid hormones, the MLFs can potentially modulate different metabolic pathways particularly those linked with energy homeostasis. This review aims to highlight the potential of ML and its flavonoids to modulate the ruminal microbiome, fermentation, and metabolic status to enhance productive performance and health in ruminants while reducing CH4 emission.

Potential of mulberry leaf biomass and its flavonoids to improve production and health in ruminants: Mechanistic insights and prospects

In recent years, mulberry has acquired a special importance due to its phytochemical composition and its beneficial effects on human health, including antioxidant, anticancer, antidiabetic and immunomodulatory effects. Botanical parts of Morus sp. (fruits, leaves, twigs, roots) are considered a rich source of secondary metabolites. The aim of our study was to highlight the phytochemical profile of each of the botanical parts of Morus tree, their health benefits and applications in food industry with an updated review of literature. Black and white mulberries are characterized in terms of predominant phenolic compounds in correlation with their medical applications. In addition to anthocyanins (mainly cyanidin-3-O-glucoside), black mulberry fruits also contain flavonols and phenolic acids. The leaves are a rich source of flavonols, including quercetin and kaempferol in the glycosylated forms and chlorogenic acid as predominant phenolic acids. Mulberry bark roots and twigs are a source of prenylated flavonoids, predominantly morusin. In this context, the exploitation of mulberry in food industry is reviewed in this paper, in terms of developing novel, functional food with multiple health-promoting effects.

Phytochemical Composition of Different Botanical Parts of Morus Species, Health Benefits and Application in Food Industry

Mulberry (Moraceae family), commonly considered as a folk remedy, has a long history of usage in many regions of the world. Polysaccharides regarded as one of the major components in mulberry plants, and they possess antioxidant, antidiabetic, hepatoprotective, prebiotic, immunomodulatory and antitumor properties, among others. In recent decades, mulberry polysaccharides have been widely studied for their multiple health benefits and potential economic value. However, there are few reviews providing updated information on polysaccharides from mulberry. In this review, recent advances in the study of isolation, purification, structural characterization, biological activity and the structure-activity relationship of mulberry polysaccharides are summarized and discussed. Furthermore, a thorough analysis of the current trends and perspectives on mulberry polysaccharides is also proposed. Hopefully, these findings can provide a useful reference value for the development and application of natural polysaccharides in the field of functional food and medicine in the future.

Mulberry (Morus spp.) of Moraceae family is regarded as a unique plant on this earth due to its broader geological distribution across the continents; ability to be cultivated in different forms; multiple uses of leaf foliage and its positive impact in environmental safety approaches such as ecorestoration of degraded lands, bioremediation of polluted sites, conservation of water, prevention of soil erosion and improvement of air quality by carbon sequestering. Mulberry is also used as a medicinal plant in improving and enhancing the life of human beings by utilizing the biologically active pharmacokinetic compounds found in leaf, stem and root parts. Further industrial exploitation of mulberry through preparation of various products in pharmaceutical, food, cosmetic and health care industries has gained the attention of industrialists. As mulberry is being exploited by sericulture, pharmaceutical, cosmetic, food and beverage industries along with its utilization in environmental safety approach; it is appropriate to call it as a most suitable plant for sustainable development. Through this review paper, all the important characteristics of mulberry were put together for considering it as an ideal plant in providing sustainable future.
