Effects of dietary garlic powder and α-tocopherol supplementation on performance, serum cholesterol levels, and meat quality of chicken

Chicken meat nutritional value with regard to fatty acid composition and selenium content depends on the choice of dietary oil and selenium level used in the chickens’ feed. The objective of this study was to investigate the effect of replacing commonly used rendered animal fat as a dietary source of saturated fatty acids and soybean oil as a source of unsaturated fatty acids, with palm oil and red palm oil in combinations with rapeseed oil, linseed oil and two levels of selenium enriched yeast on chicken breast meat nutritional value. The study also wished to see whether red palm oil had a cholesterol lowering effect on chicken plasma. 204 male, newly hatched broiler chickens were randomly divided into twelve dietary treatment groups, and individually fed one out of six dietary fat combinations combined with either low (0.1 mg Se /kg feed) or high (1 mg Se/kg feed) dietary selenium levels. Linseed oil, independent of accompanying dietary fat source, lead to increased levels of the n-3 EPA, DPA and DHA and reduced levels of the n-6 arachidonic acid (AA). The ratio between AA/EPA was reduced from 19/1 in the soybean oil dietary groups to 1.7/1 in the linseed oil dietary groups. Dietary red palm oil reduced total chicken plasma cholesterol levels. There were no differences between the dietary groups with regard to measured meat antioxidant capacity or sensory evaluation. Chicken meat selenium levels were clearly influenced by dietary selenium levels, but were not influenced by feed fatty acid composition. High dietary selenium level lead to marginally increased n-3 EPA and higher meat fat % in breast muscle but did not influence the other LC PUFA levels. Chicken breast meat nutritional value from the soybean oil and low selenium dietary groups may be regarded as less beneficial compared to the breast meat from the linseed oil and high selenium dietary groups. Replacing rendered animal fat with palm oil and red palm oil had no negative effects on chicken muscle nutritional value with regard to fatty acid composition. Red palm oil decreased total chicken plasma cholesterol, confirming the cholesterol reducing effect of this dietary oil.

This article describes the possibility of modifying the composition of fat tissue in broiler chickens fed canola oil, which is high in monounsaturated fatty acids. 128 one-day old broiler chickens, randomly assigned into 4 groups of 32 chicks each, received one of four diets containing 15% oil with different percentages of canola oil (diet 1: 0% canola oil, diet 2: 5% canola oil, diet 3: 10% canola oil and diet 4: 15% canola oil), for 31 days. Each group was divided into 4 subgroups of 8 chicks. The birds were sacrificed at day 45 to obtain tissue samples. The fatty acid composition was measured in meat (legs and breasts), fat (abdominal and subcutaneous) and plasma. An increase in oleic acid (p<0.01) was detected, as well as a decrease in linoleic acid (p<0.01), together with a slight increase in α-linolenic acid (p<0.05) with a higher percentage of canola oil. The composition of fat tissue was more representative of the dietary fatty acids than muscle tissue. In conclusion, canola oil increased the content of omega 9 and omega 3 fatty acids and decreased the content of omega 6 fatty acids in meat, fat and plasma in broiler chickens.

Modification of fatty acid composition in broiler chickens fed canola oil

An experiment was conducted to examine pulmonary hypertension and lipid peroxidation of broilers as affected by dietary fat source and α-tocopheryl acetate. Two hundred and forty day-old male chicks were used in a completely randomized design with five treatments consisted of four replicates and 12 chicks per replicate. Treatments included a control group that received no supplemental fat (treatment 1) or groups that received diets supplemented with beef tallow, soybean oil, a 50:50 blend of beef tallow and soybean oil, or soybean oil plus α-tocopheryl acetate added at 220 mg/kg (treatments 2 to 5). All diets were kept isoenergetic and isonitrogenous and diet treatments 2 to 5 had 50 g/kg of fat supplement. Results showed that weight gain and feed consumption were significantly (p ≤ 0.05) increased by adding fat to the diet during the starter stage. However, birds that received fat-supplemented diets gained less (p ≤ 0.05) during the grower period. Serum malone dialdehyde concentration and glutathione peroxidase activity were not affected by dietary treatments with the exception that inclusion of α-tocopheryl acetate to the diet supplemented with soybean oil significantly (p < 0.05) reduced the activity of the enzyme when measured at 21 days of age. The relative weights of heart and liver and the right ventricle weight to total ventricle weight ratio were greater in broilers fed fat-supplemented diets (p < 0.05).
