Effect of Selected Drying Methods and Emerging Drying Intensification Technologies on the Quality of Dried Fruit: A Review
Milivoj Radojčin,Ivan Pavkov,Danijela Bursać Kovačević,Predrag Putnik,Artur Wiktor,Zoran Stamenkovic,Krstan Kešelj,Attila Gere +7 more
- 09 Jan 2021
TL;DR: The most frequent uses of drying technology include osmotic dehydration, vacuum drying, freeze-drying and different combinations of other drying technologies as discussed by the authors, which can result in quality improvements of dried fruits and enhanced efficiency and capacity of the production process, with a positive impact on environmental and economic benefits.
Influence of Acidity and Extraction Time on the Recovery of Flavonoids from Grape Skin Pomace Optimized by Response Surface Methodology
TL;DR: In this paper, the amounts of recovered polyphenols from grape skin pomace (Vitis vinifera L. cv. Merlot) under conventional extraction with different acidities (0.5 % − 1 % HCl) and lengths of extraction time (30-60 minutes).
Physical and stress-strain properties of wheat (Triticum aestivum) kernel.
Ljiljana Babić,Mirko Babić,Jan Turan,Snežana Matić-Kekić,Milivoj Radojčin,Sanja Mehandžić-Stanišić,Ivan Pavkov,Miodrag Zoranović +7 more
TL;DR: The width and thickness of the analyzed kernels were small compared with the length, and bulk densities were also moderate, and the yield point forcevalues of the two hard varieties were 2.2 times higher than the values of the soft variety.

Convective Drying of Fresh and Frozen Raspberries and Change of Their Physical and Nutritive Properties.
Zoran Stamenkovic,Ivan Pavkov,Milivoj Radojčin,Aleksandra Tepić Horecki,Krstan Kešelj,Danijela Bursać Kovačević,Predrag Putnik +6 more
TL;DR: Convective dried Polana raspberry may be considered as a viable replacement for freeze-dried raspberries due to better accessibility, simplicity, and cost-effectiveness, and it was obvious that fresh rasp berries had less physical changes than frozen ones.
