Effects of alkali on protein polymerization and textural characteristics of textured wheat protein.
TL;DR: Results showed that the extrusion process increased the average molecular weight of gluten as evidenced by SDS-PAGE and SDS extractable protein and the protein cross-linking induced by alkali improved the texture properties of gluten extrudates.

TL;DR: In this article, a method for preparing wheat texturized fiber protein by twin-screw high-moisture extrusion is presented, which comprises the following steps: (1) providing raw materials which contain uniformly mixed wheat protein, starch and a texturizing agent; (2) inputting the raw materials into a solid feeder of a twinscrew extrusion system and carrying out secondary stirring and mixing; and (3) drying the product obtained in the step (2).
