TL;DR: In this paper, a method for producing a fermented red ginseng concentrate having an increased content of ginsenoside Rg3 was proposed, wherein the method comprises the steps of: a) preparing an extract from a red Ginseng; b) inoculating and fermenting Lactobacillus plantarum in the red GINSeng extract; c) heating the fermented liquid at a high temperature; and d) filtering and concentrating the same.
