Antioxidative activity of barley hordein and its loss by deamidation.
TL;DR: Deamidation caused fragmentation of the hordein molecule and simultaneously lowered its fatty acid-binding capacity rather than its surface hydrophobicity, and a high correlation was observed between these two events.

Decreased Antioxidative Activity of Maize Zein in Response to Deamidation Rate.
TL;DR: Ten samples with different deamidation rates were prepared from commercially available maize zein by heat treating with 0.05 n HCl in 70% ethanol, and were examined for their antioxidative activity in simply mixed protein-fatty acid (10:1) model systems at moderate humidity.

TL;DR: The recombinant cy tochrome c was fully reduced by polyvinyl alcohol (PVA), coupled with a catalytic amount of the recombinant PVA dehydrogenase (PVADH) of the same origin, suggesting that the cytochrome c involved in the pva operon is a physiological primary electron acceptor for PVADH and that PVA dehydration is linked with the respiratory chain in Sphingopyxis sp.
