TL;DR: In this paper, a model reaction with silylated 4-methoxybenzoic acid suggests that all three acetoxy groups of gallic acid can react by ester interchange reactions under the chosen reaction conditions.

Imidazole-initiated polymerizations of α-amino acid N-carboxyanhydrides – simultaneous chain-growth and step-growth polymerization
TL;DR: The N-carboxyanhydrides of sarcosine (Sar), D,L-leucine (D,L leucine), D-phenylalanine (L-Phe), and L-alanine(L-Ala) were polymerized in dioxane and the NCA/initiator ratio was varied from 1/1 to 40/1 as mentioned in this paper.
