Essential oil variation in wild populations of Artemisia saharae (Asteraceae) from Tunisia: chemical composition, antibacterial and antioxidant properties
Sami Zouari,Imen Ayadi,Nahed Fakhfakh,Hamida Jdir,Latifa Aloui,Mohamed Kossentini,Ahmed Rebai,Nacim Zouari,Nacim Zouari +8 more
TL;DR: Despite the high variation of essential oil compositions, the high altitude population did not affect severely the antibacterial activity against the most tested strains and the studied essential oil showed a chemical diversity depending on the population altitude.
The mallow, Malva aegyptiaca L. (Malvaceae): Phytochemistry analysis and effects on wheat dough performance and bread quality
Nahed Fakhfakh,Hamida Jdir,Mourad Jridi,Mostafa E. Rateb,Lassaâd Belbahri,Mohamed Ayadi,Moncef Nasri,Nacim Zouari +7 more
TL;DR: Data suggest that M. aegyptiaca may be useful as a candidate for improving nutraceutical quality of bread and that mallow supplementation at 3% level remained acceptable.

Nutritional, Antioxidant and Antibacterial Properties of Tirmania nivea, A Wild Edible Desert Truffle from Tunisia Arid Zone
TL;DR: The methanolic extract of Tirmania nivea displayed the highest DPPH• radical-scavenging activity and lipid peroxidation inhibitory activity and also exhibited remarkable inhibitoryActivity against seven species of bacteria whose minimum inhibitory concentration values ranged from 0.36 to 1.32 mg/ml.

The Rocket, Diplotaxis simplex , as a Functional Ingredient: LC-ESI-MS Analysis and Its Effect on Antioxidant and Physical Properties of Bread
Hamida Jdir,Mourad Jridi,Mahmoud Mabrouk,M.A. Ayadi,Moncef Nasri,Nacim Zouari,Nahed Fakhfakh +6 more
TL;DR: In this paper, the effect of rocket leaves powder substitution to wheat flour on alveographic properties of dough, and physical, antioxidant and sensory characteristics of wheat bread were examined, and the results showed that the rocket powder contained relatively high levels of dietary fibers and total phenolics.

Isolation of polysaccharides from Malva aegyptiaca and evaluation of their antioxidant and antibacterial properties.
TL;DR: Results suggest that M. aegyptiaca polysaccharides precipitated by cetylpyridinium chloride could be used as a naural antioxidant and antibacterial agent.
