Consumers increasingly demand convenience foods of the highest quality in terms of natural flavor and taste, and which are free from additives and preservatives. This demand has triggered the need for the development of a number of nonthermal approaches to food processing, of which high-pressure technology has proven to be very valuable. A number of recent publications have demonstrated novel and diverse uses of this technology. Its novel features, which include destruction of microorganisms at room temperature or lower, have made the technology commercially attractive. Enzymes and even spore forming bacteria can be inactivated by the application of pressure-thermal combinations, This review aims to identify the opportunities and challenges associated with this technology. In addition to discussing the effects of high pressure on food components, this review covers the combined effects of high pressure processing with: gamma irradiation, alternating current, ultrasound, and carbon dioxide or anti-microbial treatment. Further, the applications of this technology in various sectors— fruits and vegetables, dairy, and meat processing—have been dealt with extensively. The integration of high-pressure with other matured processing operations such as blanching, dehydration, osmotic dehydration, rehydration, frying, freezing / thawing and solid-liquid extraction has been shown to open up new processing options. The key challenges identified include: heat transfer problems and resulting non-uniformity in processing, obtaining reliable and reproducible data for process validation, lack of detailed knowledge about the interaction between high pressure, and a number of food constituents, packaging and statutory issues.

Opportunities and Challenges in High Pressure Processing of Foods

In recent years, new food processing techniques are attracting a lot of attention. Since some of these techniques might require the processing of foods inside their package, it is important to understand the interaction between the package and the process itself. The main objective of this article is to review the information in literature about the effects of different processing methods on: (i) the structural, mechanical and barrier properties of the materials commonly used in food packaging; and (ii) the migration behavior of additives mainly from plastic packaging films.

Effects of emerging food processing techniques on the packaging materials

Classical stabilization techniques (thermal treatments) usually involve food to be packed after being processed. On the contrary and increasingly, novel food processing methods, such as high pressure or microwaves, imply that both packaging and foodstuff undergo the stabilization treatment. Moreover, novel treatments (UV light, irradiation, ozone, cold plasma) are specifically used for disinfection and sterilization of the packaging material itself. Therefore, in the last several years a number of papers have focused on the effects of these new treatments on food-packaging interactions with a special emphasis on chemical migration and safety concerns. New packaging materials merged on the market with specific interest regarding the environment (i.e. bio-sourced materials) or mechanical and barrier properties (i.e. nanocomposites packaging materials). It is time to evaluate the knowledge about how these in-package food technologies affect food/packaging interactions, and especially for novel biodegradable and/or active materials. This article presents the effect of high pressure treatment, microwave heating, irradiation, UV-light, ozone and, cold plasma treatment on food/packaging interactions.

Effect of novel food processing methods on packaging: structure, composition, and migration properties.

Volatile compounds in fresh meats subjected to high pressure processing : Effect of the packaging material

The sorption behaviour and flavour-scalping potential of selected packaging films in contact with food simulant liquids (FSLs) (ethanol and acetic acid solutions) were evaluated after high-pressure processing (HPP). The films used were monolayer polypropylene (PP), a multilayer (polyethylene/nylon/ethylene vinyl alcohol/polyethylene: PE/nylon/EVOH/PE), film and a metallized (polyethylene terephthalate/ethylene–vinyl acetate/linear low-density polyethylene: metallized PET/EVA/LLDPE) material. D-limonene was used as the sorbate and was added to each of the FSLs. After HPP treatment at 800 MPa, 10 min, 60°C, the amount of D-limonene sorbed by the packaging materials and the amount remaining in the FSL was measured. Untreated controls (1 atm, 60°C and 40°C) were also prepared. Extraction of the D-limonene from the films was performed using a purge/trap method. D-limonene was quantified in both the films and the FSL, using gas chromatography (GC). The results showed that D-limonene concentration, in both the films and the food simulants, was not significantly affected by HPP, except for the metallized PET/EVA/LLDPE. Significant differences in D-limonene sorption were found in comparison with the control pouches. The results also showed that changes in temperature significantly affected the sorption behaviour of all films. Copyright © 2004 John Wiley & Sons, Ltd.

The effect of high‐pressure food processing on the sorption behaviour of selected packaging materials

Diffusion of the aroma compounds p-cymene and acetophenone into three different packaging films was studied at 500 MPa for kinetic measurement, and in the range of 0.1–450 MPa for measurement of the diffusion rate as a function of pressure.  Absorption of aroma compounds was lower in pressurized than in nonpressurized polymeric films. PET/A1/LDPE was impermeable to either substance; absorption was limited to the LDPE lining inside. Distribution of aroma compounds to solution and films depended on their polarity; acetophenone virtually did not diffuse into the films.  Measurements of the diffusion rate as a function of pressure has shown a diffusion barrier in the range of 100–200 MPa for the films investigated. The assumption that this is due to transition into the glassy state has been supported by studies of diffusion as a function of temperature.
