Nutritional composition, mineral content, antioxidant activity and quantitative estimation of water soluble vitamins and phenolics by RP-HPLC in some lesser used wild edible plants.

The methanolic extracts of 13 accessions of purslane were analyzed for their total phenol content (TPC), total flavonoid contents (TFC), and total carotenoid contents (TCC) and antioxidant activity of extracts was screened using FRAP assay and DPPH radical scavenging methods. The TPC, TFC, and TCC ranged from to &#x2009;mg GAE/g DW, to &#x2009;mg RE/g DW, and to &#x2009;mg (&#x3b2;-carotene equivalent) BCE/g DW, respectively. The DPPH scavenging (IC50) activity varied between &#x2009;mg/mL and &#x2009;mg/mL and FRAP ranged from to &#x2009;&#x3bc;mol TE/g DW. Among all the measured micro- and macrominerals K content was the highest followed by N, Na, Ca, Mg, P, Fe, Zn, and Mn. The overall findings proved that ornamental purslane was richer in antioxidant properties, whereas common purslane possesses more mineral contents than ornamental ones.

Evaluation of Antioxidant Compounds, Antioxidant Activities, and Mineral Composition of 13 Collected Purslane (Portulaca oleracea L.) Accessions

Objective To evaluate the nutritional composition, including major minerals, essential trace elements and toxic heavy metals of five different wild vegetables Dhekishak ( Dryopteris filix-mas ), Helencha ( Enhydra fluctuans ), Kalmishak ( Ipomoea aquatica ), Patshak ( Corchorus capsularis ) and Shapla stem ( Nymphaea stellata ) and their safety aspects. Methods Proximate parameters moisture, ash, fat, fiber, protein, carbohydrate and energy; major minerals Na, K, Ca and Mg; trace elements Fe, Zn and Cu; and toxic heavy metals Pb, Cd, Cr, Ni and Hg were evaluated in the selected wild vegetables using the standard food analysis techniques. Results The results from nutritional analysis showed that all the wild vegetables used in this study had a low content of crude fat and high content of moisture, ash, crude protein, crude fiber, carbohydrate and energy having the recommended dietary allowances. The vegetables were also rich in major minerals Na, K, Ca and Mg, sufficient in essential trace elements Fe, Cu and Zn while the heavy metals Pb, Cr and Ni were detected higher in amount in all the vegetables except Patshak than the limits recommended by Food and Agriculture Organization/World Health Organization. The heavy metals Cd and Hg were not detected in any vegetable. Conclusions The outcome of this study suggests that the wild vegetables have very good nutritional potential to meet the recommended dietary allowances, but special awareness should be taken for public health concern about the high level of Pb, Cr and Ni which exceed the Food and Agriculture Organization/World Health Organization recommended limits for the metals in vegetables.

The importance of consuming functional foods has led the food industry to look for alternative sources of ingredients of natural origin. Eggplants are a type of vegetable that is valued for its content in phytochemical compounds and it is due to the fact that this research is conducted towards the development of eggplant flour as a proposal to be used as a functional ingredient in the food industry. In this study, the eggplant fruits were divided into four groups, based on the drying method and the equipment used: Minced, drying oven (T1); sliced, drying oven (T2); sliced and frozen, drying tunnel (T3); and sliced, drying tunnel (T4). All the eggplant flours showed the same trend regarding their antioxidant capacity and phenolic content in the order T2 > T4 > T1 > T3. The freezing of eggplant was found to have a negative effect on functional and antioxidant properties. With respect to their nutritional composition, the flours did not change in their crude fiber, protein, and fat contents. In general terms, the T2 flour is a potential ingredient for the preparation of foods with functional properties since it is rich in phenolic compounds and antioxidants.

Physicochemical, Functional, and Nutraceutical Properties of Eggplant Flours Obtained by Different Drying Methods.

This study was carried out to assess the nutritional and mineral composition of selected vegetables, which are commonly used as food in Pakistan. Abelmoschus esculentus, Solanum melongena, Cucurbita moschata, Allium sativum, Momordica charantia and Portulaca oleracea were collected form Mardan (Pakistan) and subjected to nutrient analysis. Nutrient analysis (total proteins, fats, carbohydrates, ash, energy value and moisture contents) of vegetable species were determined according to AOAC methods. Macro viz. calcium (Ca), magnesium (Mg), potassium (K), sodium (Na), and phosphorus (P) and micro viz. iron (Fe), zinc (Zn), manganese (Mn), copper (Cu), nickel (Ni) and selenium (Se) elements were analyzed using Atomic Absorption Spectrometric method. The moisture (wet and dry basis), ash, fats, fibers, proteins, energy value (305.9-382.6 Kcal/100g) and carbohydrates of these vegetable species were found in the range of 62.9-92.7, 5.4-7.7, 3.1-23.1, 0.3-8.3, 10.2-22.5, 7.7-16.9, and 51.3-80.2% respectively. The micronutrients including Fe, Zn, Mn, and Cu were found to be in the range, 6.2-24.1, 0.2-11.7, 0.6-16.7, and 0.1-70 ppm respectively. The results of macronutrients obtained having values of Ca (90-1850 ppm), Mg (94-571 ppm), K (2078-4010 ppm), Na (2-170 ppm), and P (250-1532 ppm) respectively. The quantity of Ni and Se were found negligible in these vegetables. The results indicate that all these vegetables have the potential to provide essential nutrients to the human beings. Momordica charantia and Allium sativum were found to be a good source of proteins, fats, carbohydrates, hence capable of providing energy to the consumer. Both these species were found significantly useful in terms of minerals sources, particularly Ni, K, P, Zn, Cu, and Mn.
