Functional characterization of plant-based protein to determine its quality for food applications

The objective of this paper is to explore the effects of pH, ionic strength and polysaccharide type on the aqueous phase behaviors and rheological properties of soy protein isolate-chitosan (SPI-CS) and soy protein isolate-carboxymethyl cellulose (SPI-CMC) coacervates treated by vortex fluidic device (VFD) and shear homogenization. Characterization in terms of phase behavior and microstructures depicted that the VFD and shear homogenization treatments affected only the SPI-CS complex. According to the ζ-potential values at tested pHs (3.0–8.0), both physical processing had insignificant effect on charge stabilization of protein-polysaccharide complex. Both the SPI-CS coacervates (at pH 7.0) and SPI-CMC coacervates (at pH 3.0) showed gel-type rheological behaviors (G′ > 1000 Pa), suggesting that the SPI and polysaccharides did not form complex coacervate (liquid in nature) but interpolymeric complex (solid in nature). The quest for enhanced electrocatalysts can be boosted by descriptor-based analyses. Because adsorption energies are the most common descriptors, electrocatalyst design is largely based on brute-force routines that comb materials databases until an energetic criterion is verified. In this review, it is shown that an alternative is provided by generalized coordination numbers (denoted by CN ¯ $\overline {{\rm{CN}}} $ or GCN), an inexpensive geometric descriptor for strained and unstrained transition metals and some alloys. CN ¯ $\overline {{\rm{CN}}} $ captures trends in adsorption energies on both extended surfaces and nanoparticles and is used to elaborate structure-sensitive electrocatalytic activity plots and selectivity maps. Importantly, CN ¯ $\overline {{\rm{CN}}} $ outlines the geometric configuration of the active sites, thereby enabling an atom-by-atom design, which is not possible using energetic descriptors. Specific examples for various adsorbates (e.g., *OH, *OOH, *CO, and *H), metals (e.g., Pt and Cu), and electrocatalytic reactions (e.g., O2  reduction, H2  evolution, CO oxidation, and reduction) are presented, and comparisons are made against other descriptors.

Soybean is a good source of protein because the nutrition value of soybean protein is equivalent to animal protein. Soy foods have been generally proven to prevent chronic disease, such as antiobesity, antihypertensive, immunity regulation, cholesterol-lowering, lipid-lowering, anticarcinogenic and antioxidant. Moreover, soy food also decreases the prevalence of stunting in toddlers. Soybean in the form of flour can make it easier to process into food, but soy has a bad smell that they don’t like. This aroma can be reduced by heating treatment such as the drying method. So this study aimed to determine the effect of the drying method on the chemical content of soybean flour. Four methods to dry the soybean are sun drying, oven drying at 50°C, oven drying at 70°C hours, and oven drying at 100°C. After drying, the soybeans are roasted for 2 minutes with medium heat. The result shows the drying method affects the moisture, protein, fat, ash, and carbohydrate of soybean flour. Oven drying at 50°C for 3 hours is recommended to use as the best method to produce soy flour due to its nutritional value and has better aroma, sweet taste, light color, and good nutritional value.

A phonon is the medium a bulk material used to exchange energy with the environment and is thus crucial for heterogeneous catalysis. However, a physical correlation between phonons and catalytic processes has not been established yet. Herein, by combining various in situ characterization techniques, we discovered the intrinsic correlations between phonon modes and the vibrations of reactant intermediates during NO oxidation on the mullite catalyst YMn2O5. It was found that the active phonon modes (350 (Ag(5)) and 670 cm–1 (B1g(12))) are strongly correlated with the vibrational frequencies of the adsorbed −O2 and −O–NO2 intermediates. The resulting resonance will transfer the superposed energy (nℏω) of the high-energy phonons to reactants one by one via the unit energy (ℏω) and then increase the vibrational amplitude along the reaction direction, contributing to the increase in the entropy of the surface reactants and thus the reduction of the Gibbs energy of activation. Phonon resonance catalysis (PRCAT) was thus proposed based on this discovery. This work provides insights into the bidirectional selection of catalysts and precise chemical reactions by matching catalyst phonons with reactant vibrational frequencies.
