TL;DR: Fast Fourier transform (FFT) methods provide a fast and efficient means of processing large amounts of gravity or geoid data in local gravity field modelling as mentioned in this paper, however the FFT method has a number of theoretical and practical limitations, especially the use of flat-earth approximation, and the requirements for gridded data.
