The South American Andes hide countless cacti and are part of valuable Andean biodiversity. Within this large family of Cactaceae are edible cacti that are highly valued for their medicinal properties and used as edible fruits. In this review, we will make a description of the overall chemical composition, main phytochemicals found in some edible cacti of the Andean region such as sanky (Corryocactus brevistylus), pitahaya (Hylocereus monacanthus, Hylocereus megalanthus) and tuna or prickly pear (Opuntia ficus-indica). In addition, we will include its medicinal and therapeutic properties and its commercial applications and uses as a natural colorant. 

Secondary Metabolites of Edible Cacti (Cactaceae) from the South American Andes

Objetivo. Determinar la capacidad antioxidante in vitro del Corryocactus brevistylus y su efecto sobre la glicemia y páncreas de ratas diabéticas inducidas con aloxano. Materiales y métodos. Se evaluó la capacidad antioxidante del extracto hidroetanólico de sanky (EHES) mediante la capacidad de reducir el 2,2-difenil-1-picrilhidracilo (DPPH) y la capacidad de reducir el ion férrico (FRAP). Se utilizaron 30 ratas adultas inducidas a diabetes con dos dosis de aloxano (80mg/kg), formándose cinco grupos (n=6), recibiendo lostratamientos vía orogástrica durante ocho días, el grupo I (agua), II (metformina 14mg/kg), grupos IIIIV-V zumo de sanky a 1,0; 4,0 y 16 mL/kg, respectivamente. La glicemia fue evaluada por el método rápido (glucómetro) (primer y octavo día). Terminado el tratamiento los animales fueron sacrificados y se les extrajo el páncreas, para su estudio histopatológico. Resultados. La capacidad antioxidante delEHES mediante el DPPH, mostró un IC50 de 0,77 mg/mL, y por el método FRAP se observó el TEACFRAP de 22,31μg/mg. La glicemia disminuyó en el octavo día de tratamiento, respecto al primer día; también se observó disminución de la glicemia en los grupos III-V, respecto al grupo I. A nivel histológico los grupos I-II presentaron atrofia severa y necrosis moderada de los islotes de Langerhans; los grupos IV-V presentaron hipertrofia y necrosis leve multifocal a nivel del islote. Conclusiones. El extracto de sanky presenta capacidad antioxidante in vitro y el zumo ejerce un efecto hipoglicemiante y protector en páncreas.

Capacidad antioxidante in vitro del Corryocactus brevistylus (sanky) y su efecto en la morfología del páncreas de ratas diabéticas inducidas con aloxano

La cocona es una deliciosa fruta que crece en la Amazonía peruana ubicada al este de los Andes. El estudio de las propiedades físicas de la pulpa, incluyendo su reología, es necesario para optimizar las diferentes etapas y procesos para su industrialización. El objetivo de este trabajo fue evaluar la influencia de la temperatura (Tp) y la concentración de sólidos solubles (Cp) en el comportamiento reológico de la pulpa de cocona. Se variaron Tp (30 – 60 °C) y Cp (10 – 25 °Brix) según un diseño factorial 4 × 4 con tres repeticiones. Los frutos maduros mostraron las siguientes características biométricas de peso (210,2 g), diámetro axial (85,47 mm) y ecuatorial (65,56 mm) antes de ser despulpados. Las características fisicoquímicas de la pulpa fueron: sólidos solubles (6,51 °Brix), pH (3,62), acidez (1,42 g de ácido cítrico/100 g de pulpa) y humedad (86,57%). La concentración de la pulpa se realizó con la adición de azúcar blanca comercial, como agente conservante. Las mediciones reológicas fueron evaluadas en un viscosímetro rotacional de Brookfield. Los parámetros reológicos ayudaron a calcular el índice de consistencia (K: 48,63 a 111,14 Pa·sn) e índice de flujo (n: 0,271 a 0,353) a través del modelo matemático de Ley de la Potencia con fines predictivos (R2 > 0,9), bajo el dominio estudiado. Las pulpas evaluadas revelaron un comportamiento no newtoniano de tipo pseudoplástico y la energía de activación varió de 11,55 a 14,81 kJ/mol. Estos resultados pueden ser utilizados para futuros trabajos, parámetros de calidad.

Influencia de la temperatura y concentración de sólidos solubles en el comportamiento reológico de la pulpa de cocona

The intense production systems present in the Andean region have generated serious disturbances to high mountain ecosystems, which provide ecosystem services of great importance such as minerals, flora, and fauna. The study of the native flora through morphological descriptors becomes relevant to characterize and identify the vegetation that could be used in agroecological systems. This could serve as a strategy for the recovery and sustainable use of degraded systems since they promote diversity and responsible use of natural resources. The objective of this research was to determine the foliar morphological patterns that characterize four native shrub species of the High Andean forest: C. arborea; W. mariquitae; V. triphyllum y L. Subseriata. Fifteen qualitative and quantitative morphological leaf descriptors were used. Data were subjected to multivariate analysis of main components and multiple correspondences for quantitative and qualitative variables, respectively. Leaf width and leaf shape were found among the most relevant descriptors for C. arborea; leaf length and main petiole length for L. Subseriata; leaf width and color on the upper leaf side for W. mariquitae; and leaf width and petiole thickness for V. triphyllum. This work contributes to identifying the most relevant morphological traits of four High Andean forest shrub species with potential for the implementation of agroecological systems that contribute to the sustainability of areas disturbed by agricultural actions. 

Rasgos morfológicos de especies nativas potenciales para procesos agroecológicos Alto Andinos, Nariño, Colombia

La presente investigación, analiza las características y propiedades de la producción de aguaymanto, que no se perciben directamente por consumidores ni agricultores; este fenómeno se denomina como ventajas latentes, que están pero que no se advierten de manera explícita, para puntualizar es necesario identificarlos de manera exhaustiva, por lo que genera bajos niveles de consumo y producción en la región Arequipa. El objetivo de la investigación es identificar las ventajas latentes de la producción de aguaymanto, subrayando las características y propiedades tanto a nivel de la producción como del consumo. La Metodología aplicada es del tipo análisis documental transversal no experimental, la información analizada tiene carácter de secundaria, levanta la línea de base en función a investigaciones previas, tanto a nivel particular como público a través de instituciones del Estado. A su vez, considerando que es un cultivo originario y tradicional en los sectores andinos del Perú y América Latina se expone las bondades del producto. Entre los hallazgos relevantes destacan las propiedades del valor nutricional en sus diversas manifestaciones, la facilidad para adaptarse a las diferentes temperaturas, las características antioxidantes del producto, implicancias de la vitamina C y su contenido proteico, entre otras propiedades, concluyendo que el aguaymanto siendo un producto oriundo del ande peruano es aún oculto, cuyas bondades la convierten alternativamente en fruto emergente a las condiciones socioeconómicas de sectores rurales empobrecidos.

Ventajas latentes de la producción de aguaymanto (physalis peruviana) en Arequipa

There are many native fruits in Peru containing essential nutrients for health and that have not been fully studied. The objective of this research was to determine the physicochemical, nutritional and morphological characteristics of five varieties of native fruits from the central Andean region and the northern Peruvian jungle: goldenberry (Physalis peruviana), sanky (Corryocactus brevistylus), cocona (Solanum sessiliflorum), yellow pitahaya (Selenicereus megalanthus) and camu camu (Myrciaria dubia). The fruits were washed, peeled, pulped, fleshed, and lyophilized, to determine, using standardized analytical methods, the nutrient content, such as vitamin C, fiber, soluble solids. The goldenberry, sanky and camu camu fruits presented the highest vitamin C content (43.0, 57.1 and 2,780 mg per 100g of fresh weight, respectively), while cocona and pitahaya had 4.54 and 8.0 mg per 100g of fresh weight, respectively. The goldenberry and pitahaya (26.85 and 9.75%) yielded the highest content of reducing sugars. At the same time, goldenberry and cocona reported the highest fiber values (4.9 and 2.5%, respectively). Regarding the content of soluble solids (°Brix), pitahaya and goldenberry showed the highest values (16.2 and 13.3 respectively). In conclusion, the results obtained show that the native fruits studied represent an important source of nutrients that can be beneficial for human health.
