In recent years, there has been a growing interest in the design of novel nonthermal processing systems that minimally modify sensory, nutritional, and functional properties of fruit and vegetable juices and beverages. The benefits of nonthermal treatments are strongly dependent on the food matrix. Thus, an understanding of the effects that these technologies exert on the properties of juices and beverages is important to design and optimize technological parameters to produce value-added products. This review covers research on nonthermal electrical treatments, high pressure processing, ultrasound, radiation processing, inert gas treatments, cold plasma, and membrane processing. Advances towards optimization of processing conditions, and combined technologies approaches have been also extensively reviewed. This information could be useful to: (1) manage processing systems and optimize resources; (2) preserve nutritional value and organoleptic properties, and (3) provide processing conditions for validation of these technologies at the industrial scale.

Nonthermal Technologies for Fruit and Vegetable Juices and Beverages: Overview and Advances.

Combined effect of microwave and ultrasonication treatments on the quality and stability of sugarcane juice during cold storage

Medicinal plants that are used today have been known by people of ancient cultures around the world and have largely been considered due to their medicinal properties. Cornus mas L. (Cornelian cherry) is one of these medicinal plants with high level of antioxidant activity. Cornelian cherry is an attractive ornamental plant with delicious fruit having nutritional and therapeutic values. The main purpose of this paper is to present and summarize the pharmacological and therapeutic effects from researches done on Cornelian cherry in studies from 2000 to 2016. Information and findings in this review were taken from electronic journals in some websites including PubMed, Elsevier, ISI, Google scholar, SID and relevant books. C. mas L. is important in terms of decoration and is used in traditional medicine to treat diarrhea, inflammatory bowel disease, cholera, fever, malaria, kidney stones, urinary tract infections, cancer, bleeding and heat stroke. Several studies have shown that Cornelian cherry fruit plays an important role in prevention of atherosclerosis, blood sugar, lipid profiles and reduction of fat accumulation in the liver. Cornelian cherry has antimicrobial, antiparasitic, anti-inflammatory, antioxidant and anticancer effects as well as protecting liver, kidney and cardiovascular system. Using Cornelian cherry in pharmaceutical and food industries has caused fantastic value of this plant. Pharmaceutical properties of Cornelian cherry seeds, fruits, leaves and stems have led the need of further studies to explore the other unknown effects or review mechanism of its pharmacological effects for preparation of new drugs.

Cornus mas: a review on traditional uses and pharmacological properties.

One of the nonthermal methods is the atmospheric pressure cold plasma (APCP). In this study, the effect of cold plasma on the reduction of Escherichia coli bacteria and qualitative properties of sour cherry juice, including total phenolic content (TPC), total anthocyanin content (TAC), and vitamin C, were investigated. Independent variables included plasma exposure time (1, 5, and 9 min), applied field intensity (25, 37.5, and 50 kV/cm), feeding gas oxygen content (0%, 0.5%, and 1%), and sample depth (0.5, 1, and 1.5 cm). The results show that increased oxygen content in argon has the greatest effect on the reduction of bacteria, and plasma exposure decreased 6 logarithmic periods of E. coli bacteria in sour cherry juice. Optimization results showed when all bacteria were eliminated by plasma, TPC remained unchanged, and TAC and vitamin C decreased by 4% and 21%, respectively, while thermal methods increased TPC by 23% and decreased TAC and vitamin C by 26% and 77%, respectively. These results indicate that, compared with conventional thermal methods, sour cherry juice pasteurization using APCP has little effect on the juice qualitative properties, and this method can serve as a suitable alternative to conventional thermal methods.

Evaluation of an enhanced ultrasonic-assisted biodiesel synthesized using safflower oil in a diesel power generator

This study aimed to examine the effectiveness of combined microwave-ultrasonic pasteurization system on Escherichia coli and vitamin C content in sour cherry juice (SCJ). Based on the findings, microwave output power, ultrasound power, and ultrasonic exposure time as well as the microwave-induced temperature were the most effective factors in reducing E. coli and vitamin C content. In addition, the microwave-induced temperature and ultrasonic exposure time, as independent variables, were both effective on E. coli removal. At higher temperatures, the effectiveness of ultrasonic waves as well as cavitation intensity declined. However, their combined effect (ultrasound and temperature) was more significant than their individual effect. It was also found that any increase in ultrasound power, ultrasonic exposure time, and microwave output power led to a significant reduction in vitamin C content, while the ultrasound power was the most effective. On the basis of RSM modeling, the optimum processing condition was: 352.21W microwave output power, 49.94uC temperature, 475.13W ultrasound power and 6 minutes of exposure time. On the basis of response surface methodology (RSM) modelling, the maximum vitamin C content was 142.5 mg per 100 mL with no remaining E. coli .
