Characterization and comparison of lipids in bovine colostrum and mature milk based on UHPLC-QTOF-MS lipidomics.

Background Human milk is recommended as the optimal source of nutrition for babies up to six months of age, as it provides individualized, specific and abundant nutritional compounds, as well as immunological protection. Currently, there is wide interest in studying human milk because of this key role, as well as identification of biologically active compounds. In addition, human milk banks play an important role in supplying donor human milk to infants, especially premature infants, in hospitals, which involves processing and storage of such milk. Scope and approach This review summarises recent studies on macronutrients in human milk, including their structure, levels, influencing factors, and contributions to the health benefits of infants. Physico-chemical properties of human milk are also reviewed, including pH, colour, stability of casein micelles, size and zeta-potential of fat globules, heat stability, freeze-thaw effect, dehydration and phase separation, and the impact of preservation processes on these. Key findings and conclusions The levels of human milk macronutrients and factors that influence these, such as lactation and gestational age, are ongoing research topics. Studies on physicochemical properties of some human milk components, such as caseins, are comparatively few, as research has mainly focused on bioactive peptides, milk fat globule membrane and human milk oligosaccharides. Processing and preservation are applied to human milk and the effects of these methods on the retention of human milk nutrients for use in human milk banks and hospitals must be considered. Some physico-chemical properties, such as milk pH, colour, and physical stability, may be possible indicators of milk quality.

The composition and physico-chemical properties of human milk: A review

Triglyceride (TG) is a class of neutral lipids, which functions as an energy storage depot and is important for cellular growth, metabolism, and function. The composition and content of TG molecular species are crucial factors for nutritional aspects in food chemistry and are directly associated with several diseases, including atherosclerosis, diabetes, obesity, stroke, etc. As a result of the complexities of aliphatic moieties and their different connections/locations to the glycerol backbone in TG molecules, accurate identification of individual TG molecular species and quantitative assessment of TG composition and content are particularly challenging, even at the current stage of lipidomics development. Herein, methods developed for analysis of TG species, such as liquid chromatography-mass spectrometry with a variety of columns and different mass spectrometric techniques, shotgun lipidomics approaches, and ion-mobility-based analysis, are reviewed. Moreover, the potential limitations of the methods are discussed. It is our sincere hope that the overviews and discussions can provide some insights for researchers to select an appropriate approach for TG analysis and can serve as the basis for those who would like to establish a methodology for TG analysis or develop a new method when novel tools become available. Biologically accurate analysis of TG species with an enabling method should lead us toward improving the nutritional quality, revealing the effects of TG on diseases, and uncovering the underlying biochemical mechanisms related to these diseases.

Yak milk is a characteristic animal product of yaks in the Qinghai-Tibet Plateau. Although yak milk production is low, it is richer in nutrients such as protein, fat, and lactose, a more comprehensive range of bioactive components, and unique microbial resources than Holstein cow milk. The plateau environment makes yak milk resistant to hypoxia, anti-fatigue, antioxidant, antibacterial, and relieves chronic diseases. In this paper, based on the systematic analysis of yak milk research results in the past 20 years using CiteSpace 6.1.R2, we reviewed yak lactation performance and nutritional efficacy of yak milk. This paper summarizes the improvement of traditional yak dairy processing technology, and also focuses on the microbial diversity of yak milk sources and their beneficial effects. The purpose of this review is to provide scientific support for the development of a quality yak milk industry on the Tibetan plateau.
