At present and more so in the future, irrigated agriculture will take place under water scarcity. Insufficient water supply for irrigation will be the norm rather than the exception, and irrigation management will shift from emphasizing production per unit area towards maximizing the production per unit of water consumed, the water productivity. To cope with scarce supplies, deficit irrigation, defined as the application of water below full crop-water requirements (evapotranspiration), is an important tool to achieve the goal of reducing irrigation water use. While deficit irrigation is widely practised over millions of hectares for a number of reasons—from inadequate network design to excessive irrigation expansion relative to catchment supplies—it has not received sufficient attention in research. Its use in reducing water consumption for biomass production, and for irrigation of annual and perennial crops is reviewed here. There is potential for improving water productivity in many field crops and there is sufficient information for defining the best deficit irrigation strategy for many situations. One conclusion is that the level of irrigation supply under deficit irrigation should be relatively high in most cases, one that permits achieving 60–100% of full evapotranspiration. Several cases on the successful use of regulated deficit irrigation (RDI) in fruit trees and vines are reviewed, showing that RDI not only increases water productivity, but also farmers’ profits. Research linking the physiological basis of these responses to the design of RDI strategies is likely to have a significant impact in increasing its adoption in water-limited areas.

Ensuring naturally low K levels in the berry will help reduce costs of input and waste management at the winery. Potential vineyard management options to manipulate berry K accumulation include selective use of rootstock/scion combination, canopy management and irrigation strategies. However, the impact of these practices on determining the optimum K concentration requires careful calibration of production parameters and the desirable grape juice and wine quality in relation to tissue K concentration. This paper reviews and discusses the possible functions of K in grape berries, translocation of K into the berry, and genetic and cultural factors that may affect the accumulation of K in the berry. This will help to identify the key research and management strategies needed for controlling K concentrations in grape berries.

A review of potassium nutrition in grapevines with special emphasis on berry accumulation

The rapidly increasing world population and the scarcity of suitable land for agricultural food production together with a changing climate will ultimately put pressure on grape-producing areas for the use of land and the input of resources. For most grape-producing areas, the predicted developments in climate will be identical to becoming more marginal for quality production and/or to be forced to improve resource management. This will have a pronounced impact on grapevine physiology, biochemistry and ultimately production methods. Research in the entire area of stress physiology, from the gene to the whole plant and vineyard level (including soils) will need to be expanded to aid in the mitigation of arising problems.

In this review, we elaborate on some key issues in environmental stress physiology such as efficient water use to illustrate some of the challenges, current limitations and future possibilities of certain experimental techniques and/or data interpretations. Key regulatory mechanisms in the control of stomatal conductance are treated in some detail and several future research directions are outlined. Diverse physiological aspects such as the functional role of aquaporins, the importance of mesophyll conductance in leaf physiology, night-time water use and respiration under environmental constraints are discussed. New developments for improved resource management (mainly water) such as the use of remote sensing and thermal imagery technologies are also reviewed. Specific cases where our experimental systems are limited or where research has been largely discontinued (i.e. stomatal patchiness) are treated and some promising new developments, such as the use of coupled structural functional models to assess for environmental stress effects on a whole-plant or canopy level are outlined. Finally, the status quo and research challenges around the ‘CO2-problem’ are presented, an area which is highly significant for the study of ‘the future’ of the grape and wine industry, but where substantial financial commitment is needed.

Hydraulic and chemical signalling in the regulation of stomatal conductance and plant water use in field grapevines growing under deficit irrigation

Aims: Plant water status monitoring during the vineyard growth cycle constitutes a basic parameter for both harvest quality and vineyard management. Unfortunately, the plant water status measurement requires skills and heavy devices which drastically limit the number of repetitions either in space or in time. Moreover, due to the significant spatial variability in viticulture, extrapolation of one local measurement to a larger scale, vine field or vineyard, is difficult. Therefore, the design of tools and methods to characterize and to assess the spatial variability of plant water status constitutes a big challenge. The aim of this paper is to propose an approach allowing the spatial variability of the plant water status to be assessed.Methods and results: This work proposes a complete literature review of previous works using different approaches to assess the vine water status. Based on this review, it leads to a conceptual approach considering the Spatial (S) and Temporal (T) variability of the plant water status assessment at a whole vineyard scale. This paper is divided into three sections: (i) description of plant water status reference methods based on direct measurements on the plant, (ii) plant water status assessment methods based on auxiliary information (i.e. weather, soil and plant vegetative expression), and finally (iii) a proposal for combining local reference measurement and auxiliary information to characterize the spatial variability of the vine water status at the vineyard scale.Conclusion: Taking into account restrictive assumptions, this paper points out the possibility to provide relevant spatial assessment of the vine water status. This possibility is illustrated with a simple example.Significance and impact of the results: This work gives an answer to the significant problem of vine water status assessment over space. It proposes an approach based on high spatial resolution auxiliary information to extrapolate a measurement (PLWP or SWP) made at a given time on a reference site. This proposal determines the different steps for further investigations aiming at proposing a spatial model of vine water status.
