Logistics of the Dairy Sector New Technological Structure Formation of the Food Industry of the Agroindustrial Sector in the Conditions of the Limited Traditional Raw Materials Resources

The purpose of the research is to substantiate the choice of enzyme preparations Promod 523MDP, Promod 439L, Flavorpro 766MDP, and Flavorpro 750MDP (Biocatalysts Limited, UK) and to determine the effective time of whey proteins hydrolysis in an ultrafiltration concentrate (UF-concentrate) of cheese whey for reducing their allergenicity based on the analysis of kinetic constants of the proteolysis reaction. Experimental studies were carried out with samples of cheese whey UF-concentrate with a total protein mass fraction at least 3.0% obtained with the use of industrial ultrafiltration unit MMS Swissflow UF with ceramic membranes under the conditions of the PSC Dairy Plant “Voronezhskii”. They were preliminarily subjected to enzymatic hydrolysis for 8 hours at a constant temperature, based on the dosage data, the optimum pH and the temperature of the used enzymes, recommended by the manufacturer. The specificity constant Vmax/Km was used to estimate the effectiveness of the enzyme preparations, which characterizes the constants of all stages of the hydrolysis reaction. The highest proteolysis rate has a mixture of Promod 439L and Flavorpro 766MDP in the ratio of 1.5 and 3.0%, respectively, of the total protein content in the substrate. Microscopy results showed an increasing in the solubility of nitrogen-containing components after hydrolysis due to a decreasing in hydrophobic areas on the surface of peptides. The resulting hydrolysate can be applied in the technology of a wide range of dairy products to reduce their residual antigenicity by partially replacing skim milk in the formulation.

The present research employed a convergent approach and cognitive methodology to define the upgrade options in the sphere of domestic dairy industry according to the principles of the 5th technological paradigm. The principles include biological nanomembrane cluster technologies with a complete production cycle. The paper offers a forecast for the 6th technological paradigm, which presupposes picotechnology for the production of milk derivatives, such as lactose hydrolysates, lactulose, microparticulate proteins, peptides, and amino acid pool. The principle makes it possible to return secondary dairy raw materials into the technological cycle. These significant resources include low-fat milk, buttermilk, and especially whey, which can be used to produce functional foods for various population groups, as well as new generation forage resources. From the point of view of logistics, the modern dairy industry should employ a digital and robot-aided non-waste production scheme. Thus, all dairy raw materials should be considered as natural clusters according to the nature-formed biotechnological system (BTS). These clusters are lipids (fats), nitrogencontaining substances (proteins), carbohydrates (lactose), minerals (salt), biologically active substances, and water. As an idealised model of agricultural raw material, milk is extremely complex. Its chemical composition includes more than 2000 constituents and 100000 molecular structures. In addition, dairy architectonics is also extremely complex: milk is suspension, emulsion, and solution, concurrently. Finally, milk possesses unusual physicochemical, osmophoric, structural-mechanical, bio-thermodynamic, and other characteristics. We conducted a long-term systematic analysis and developed a scheme that can help the domestic diary industry to adapt safely to the new technological paradigm. The scheme takes into account various factors, such as limited traditional dairy resources, Russia’s accession to the WTO, and the globalisation of the world dairy market. Our research team belongs to the leading federal scientific school ‘Living Systems’ (No.7510.2010.4) developed by the North Caucasus Federal University (Russia).

The possibility of reducing the residual antigenicity of whey Р-lactoglobulin, the main milk protein, using various mixtures of food proteases has been studied. A mixture of enzyme preparations that provides to most effective hydrolysis of Р-lacto- globulin in whey ultrafiltration concentrate was selected (Flavorpro F766 MDP (3%) + Promod P439L (1,5%)). This system, as was shown by the in silico analysis, was also the most efficient in the decrease (by more than 66%) in the Р-lactoglobulin allergeni- city.
