Physicochemical, functional, antinutritional and pasting properties of taro, rice, pigeonpea flours and their blends were determined and related to each other using Pearson correlation and Principal Component Analysis (PCA). Taro flour was significantly (P < 0.05) different from other flours due to its highest ash, crude fiber, lower fat and protein content and exhibited lowest L∗, ΔE, foaming capacity (FC) and highest WSI (water solubility index), WAC (water absorption capacity) and OAC (oil absorption capacity) as compared to rice and pigeonpea flour. Different blends were prepared incorporating the ratio of taro flour at 20 g/100 g, 30 g/100 g, 40 g/100 g, 50 g/100 g, 60 g/100 g levels with the blends consisting of equal proportions of rice and pigeonpea flour. Increased concentration of taro flour in the blends resulted in shifting of the blends towards the right positive score of first principal component (PC1) thereby indicating the detection of blends containing 40 g/100 g taro flour with an ease in the admixture of different flours. Taro flour contained higher oxalate, pasting temperatures (PT), peak viscosity (PV), trough viscosity and polyphenol content while lesser amount of phytate and lower setback viscosity than other flours.

The development of food products using composite flour has increased and is attracting much attention from researchers, especially in the production of bakery products and pastries. This article focuses on the use of composite flour to produce food products, namely bread, biscuits, and pasta, with looks at on its impact, following some improvements made, on the sensory quality, rheology characteristics, and nutritional values as well as its overall acceptance. The blending of wheat flour with various sources of tubers, legumes, cereals and fruit flour in different percentages to produce variety of food products are also reported in this review. It was found that composite flour used to produce food products is still able to maintain similar characteristics to products made from full-wheat flour. The positive effects of the use of composite flour can be seen in the final product related to the functional and physicochemical properties and health benefits of raw blended flour along with percentage blending. Overall, composite flour is a good new approach to utilizing uncommon food products as the application of composite flour produced products with different characteristics and quality, depending on the types and percentage of wheat flour used in the formulation.

Applications of composite flour in development of food products

Tubers are important sources of carbohydrates as an energy source and are used as staple foods in tropical and subtropical countries. They are generally processed into various forms before consumption. Processing makes them digestible and palatable, extends the shelf life and reduces post-harvest losses. Taro (Colocasia esculenta) is a tropical tuber crop largely produced for its underground corms contain 70–80 % starch and the corms of Colocasia antiquorum contain anthocyanins such as cyanidin-3-glucoside, pelargonidin-3-glucoside and cyanidin-3-chemnoside which were reported to have antioxidative and anti-inflammatory properties. Taro consumption has been affected by the presence of acridity factors, which cause sharp irritation and burning sensation in the throat and mouth on ingestion. Taro is rich in gums (mucilage) and small sizes of starch granules makes it a highly digestible which is used for the preparation of various foods. The present paper deals with reviewing the nutritional, antinutritional and utilization of Taro into the various food products.

Utilization of taro ( Colocasia esculenta ): a review

Blends of refined wheat flour (RWF) with colocasia (CF), sweet potato (SPF) and water chestnut (WCF) flours respectively at replacement level of 25 g/100 g were assessed for their suitability for noodles making. All the native flours as well as their blends with RWF exhibited restricted swelling behavior. Incorporation of SPF or CF into RWF decreased the peak viscosity of flour blends. Noodles prepared from respective flour blends of SPF and CF with RWF showed lower cooking time, higher cooked weight, higher water uptake and higher gruel solid loss in comparison to control sample (RWF noodles). Among blend flours noodles, RWF and SPF blend noodles were rated superior for their organoleptic/eating characteristics of slipperiness, firmness, appearance but undesirable high value of tooth packing. Noodle with acceptable quality characteristics and decreased level of gluten, which may prove beneficial for celiac persons, can be developed using RWF blends with non-conventional flours like colocasia, sweet potato and water chestnut.

2 Abstract: This study investigated the effects of using taro flour as partial substitution of wheat flour in balady bread (Egyptian bread) making with substitution levels of 5,10,15 and 20% on the farinograph, extensograph properties of the produced doughs, organoleptic properties and chemical composition of the produced bread. The Farinograph results showed that the increase of substitution level increase the water absorption and dough weakening but decrease the mixing time and dough stability, while the results of extensograph showed that dough energy, the resistance to extension and the proportional number decreased with the increasing the taro flour level in the flour blends, while the dough extensibility increased. While the organoleptic evaluation showed that the substitution of wheat flour with taro flour up to 10 % produce bread similar to the control (wheat bread) in all the organoleptic properties. Also, the increase of the taro flour level resulted in decreasing in the crude protein and ether extract while, ash, total carbohydrates and fiber contents increased. It could be concluded that the substitution of wheat flour with taro flour in bread making with substitution level up to 10 % produce bread with rheological and organoleptic properties similar to the wheat flour bread.
